Discover the bright and complex character of Nicaragua La Estancia, a single-varietal microlot sourced from Finca La Estancia, a small farm nestled in the Dipilto highlands of Nueva Segovia. Grown at 1000 masl by producer Luis Bernardo Papuaga, this exceptional lot features the Marsellesa variety and has been meticulously processed to highlight vibrant fruit and spice notes.
Processing is carried out at the San Ignacio Mill in Mozonte, under the expert supervision of Mayerling Escoto. This microlot underwent an extended anaerobic cherry fermentation, followed by a natural drying process on raised beds: 22 days in the sun and 6 days under cover. Each batch is carefully turned throughout the day and protected at night to ensure optimal quality and consistency.
